Dulce de Leche de Tia

I usually make my dulce de leche by slowly simmering a can of sweetened condensed milk in water, but one of my Tias — one of the best cooks I know — recently sent me her recipe for dulce de leche. It appears as simple as simmering the can in the crock pot.

So, on this rainy day in the South, it appears I, self-proclaimed Diva of Dulce de Leche, will forgo squeezing the dulce leche from the pre-bought squeeze bottle and give this simple dulce leche recipe a try.

Tia’s Dulce de Leche

  • 2 cans evaporated milk
  • 1+3/4 cup of sugar
  • 2 tablespoons of fresh lemon juice
  • 1 cinnamon stick
  • 1 or 2 egg yolks, beaten Your choice
  • 1 pinch of salt

Mix and stir the milk with the sugar, eggs, lemon, salt and cinnamon. Cook over medium heat until it turns glorious caramel color.

Use it on toast, pancakes or waffles. Drip the famous caramel on ice cream or dollop on the side of any dessert like flan or pie. Use it to dip fruit, marvel in the taste.

Or, just stick your spoon in it and eat.
